This recipe is really simple and great for families, or individuals looking for leftovers for the week!
What you'll need:
- 1 butternut Squash
- 1lbs of ground turkey (chicken works too)
- 1 corn cob (or frozen corn)
- 1/2 cup of baby spinach
- 1/2 cup of diced red pepper
- 1 tsp of basil
- 1 tsp of thyme
- 1 tsp fresh ground pepper
- 2 tbsp olive oil
What to do:
Start by cubing the squash and boiling it. Add a sweet potato if you want to increase the carbs. Cook the ground turkey in a frying pan with all of the spices and olive oil.
Next, smash the squash and add a little salt if you like.
Now lay the cooked turkey on the bottom of a cooking dish. next spread the red pepper and fresh (or frozen) corn. Now layer the spinach and top with the SMASHED squash. Garnish with a little more basil and thyme.
Toss it in the oven at 400 for 20 minutes or so.
