All you need is:
- 2 medium chicken breast sliced into strips
- 1 sweet potato (peeled and cubed)
- 4 to 5 mushrooms (sliced)
- 1/2 cup of balsamic vinegar
- 1/4 cup of honey
- 2 tbsp of olive oil
- 1 garlic clove (minced)
- Salt and pepper
Frist, preheat your oven to 400.
Next, place the chicken, sweet potato, and mushrooms in a baking dish. Now, drizzle the rest of the stuff on top... Yup, that simple folks.
Now, cover with aluminium foil, and toss in the oven for 20 mins.
Boom. All done.
I felt like adding a little green to this meal so I added some kale! I like my kale steamed with a light spray of olive oil and a pinch of salt and pepper!
This is one meal that blows my mind because it is so simple, and packed with flavour!
