What you'll need:
- 1 cup of quinoa
- 1 cup of broccoli
- 1/2 cup of red pepper
- 1/4 cup of grated light cheddar cheese
- Salt and pepper
Instructions:
Start by bringing two cups of water to a boil. Once the water is boiling add the quinoa and red pepper. Return to a boil then reduce the heat to medium. After simmering for about 10 minutes on medium heat, add the broccoli and simmer for 5 more minutes. Now remove from heat and mix in the cheese and some salt and pepper to taste!
Pretty easy eh? This yields two to three servings (depending on your diet).
