Sun Dried Tomato and Feta Omelette

This is a really simple recipe that I like to have once a week or so to switch up my morning egg white omelette. It's really full of flavour and excitement.

What you will need:

  • Egg whites (I use 1 cup of liquid egg whites. This amount fits the protein requirements of my day)
  • 2 sun dried tomatoes (dry, not soaked in oil! This is a health and fitness blog people!)
  • 30g of feta cheese
  • Some veggies (I used spinach, red pepper, and mushrooms)
  • Salt and pepper 
How to cook it up:

Typically I toss all of these things in a pan and scramble my eggs then top with the cheese. But, today I felt like REALLY switching things up, so I made it more like a traditional omelette. So, start by heating up a lightly oiled pan to medium heat. Pour in your egg whites and cook until you're able to flip them in one whole piece (approximately 5-7 minutes). 





After you flip you can lay down the rest of the ingredients on top. I lined them up in the center to look pretty. 

As usual, this is pretty simple and only the outline to a great meal.
