Spring Chunky Salad

The title is the best part of this recipe. I mean, what sounds more delicious than a Chunky Salad.

What you'll need:

  • 1-2 large carrots (or 20 or so baby ones)
  • 1 cup of red cabbage
  • 1/2 cup of sliced bok choy or baby spinach
  • 1/2 of a red pepper
  • 1 lemon
  • 2 tbsp of olive oil
  • 1 tbsp fresh dill
  • Pepper and salt
What to do with all of the ingredients:

Start by julienning the red pepper and carrots. This takes a while but yields a correct amount of chunk. Slice your red cabbage and bok choy (or spinach) into similar sized slices. Combine the vegetables and the dill into a large bowl.

Now pour the olive oil and juice from one lemon on the vegetables. Toss the vegetables and season with salt and pepper to taste.

Boom. 





A great simple dish that goes great with anything you could cook on the grill.
