Avocado and Tuna Melt

While discussing the wonders of tuna with a friend, she mentioned something to me that changed my life. She told me to mix my tuna with avocado to get a tuna salad like texture, without the gross mayo-ness. This inspired many delicious meals. One of which you're about to learn about.

Ingredients and such:

  • 1/2 can of tuna
  • 1/4 of an avocado
  • 1/4 cup of diced peppers (I used red peppers this time)
  • 1/4 cup of diced tomato
  • 1 slice of bread or bread substitute (if you don't want the carbs, try using eggplant.) (I used pumpernickel bread!)
  • Feta cheese (30g) (If you don't have a scale you should get one. You should be able to find one for 20-30 dollars)
  • Fresh ground pepper
How to assemble:

Pretty simple folks. Start by mashing up your avocado with a fork. Mash it real good. Add the tuna, peppers, and tomato. Mix it up and put it on the bread or bread substitute. Top with the cheese and fresh ground pepper and toss it on the bbq at 400. Leave it on for 5-10 minutes with the lid shut, and enjoy!




AAAANNND, If you don't have a BBQ, or if it's raining and you're made of sugar, you can cook this on a frying pan at medium heat covered for 5-10 minutes. Or, in the oven at 400 for 5-10 minutes! So, you can enjoy this sucker year round!
