Two Bite Zucchini Pizzas

PIZZA? Yes please.

I often crave the most common comfort foods. So, I am always looking for ways to feel like i'm eating them, without actually eating them. This is one of my recent favorites. Why? because it can be an easy 100-120 calorie snack, or a part of a meal (today, I had four of them with a grilled chicken breast and some arugula).

So, what will you need to make these delightful creations? Well, these ingredients of course:

  • Zucchini
  • Mozzarella (low fat if you desire, or any cheese if you don't like the mozz)
  • Pizza sauce (I just use canned stuff that costs 79 cents, you use so little it doesn't really matter)
  • Salt and pepper (freshly ground if you want) 


What to do:

I start by slicing the desired number of pieces of zucchini, cut them about one cm thick. I place them on parchment paper on a cookie sheet and lightly salt and pepper them. I then toss them in the over for five to seven minutes at 400 degrees to tender them up. While these are tendering up I shred the desired amount of cheese. 

After the five minutes, remove them and spread about a tsp of pizza sauce (told you it wasn't a lot) then the desired amount of cheese. Salt and pepper these fellas and toss them back in the oven for four or five minutes and, BOOM. You have some tiny pizza things that aren't bad for you. 



WAIT! let them cool. Just like pizza, these jerks will burn the heck out of your mouth. You just need to hold your horses alright?!
