Turkey and Roasted Eggplant Burgers

Well folks, today I have yet another 'feel like you're eating unhealthy' meal. This recipe does require a bit more work than most of my previous recipes, but it's not so bad! A quick note for this recipe; a lot of the ingredients can be interchangeable. So, swap things out if you feel the need!

What you might want to use:
  • Ground turkey (1-2 cups depending on your protein needs)
  • 1/4 chopped yellow onion (I know for a fact i have a few readers who hate onion, so they can exclude them... Even though they're GREAT for you..)
  • Fresh rosemary (dried if you don't keep a stock of the fresh stuff)
  • Eggplant 
  • Tomato
  • Arugula (or baby spinach if you don't like arugula) 
  • Light bree cheese (or some boursin if you've got the dollar bills)
  • Balsamic vinegar
  • Salt and pepper 


Lets get to work:

Preheat over to 400. Now, cut a two cm slice of eggplant and salt it. Letting the eggplant sit salted for 20 minutes will help remove some of the bitterness. While the eggplant sits, prepare the turkey. 

Mix the turkey and onion with some salt and pepper. Form into tennis ball sized portions and toss them on a frying pan at medium heat (or a bbq if you have one on the go!). Cook them for roughly 10 minutes on each side (until meat is cooked thoroughly). 

Now take your eggplant and rinse the salt off of it. Place the eggplant on a cookie sheet with parchment paper. Salt and pepper to taste and place a sprig of fresh rosemary (or 1/2 a tsp of dried rosemary) on it. Roast the eggplant in the oven for about 8 minutes on each side. 

While the eggplant and turkey is cooking, slice a tomato and drizzle it with balsamic vinegar. Once the turkey is finished, toss the tomato in the pan and the arugula on the burger. Cover and simmer on medium heat for 3-4 minutes.

Once everything is cooked, Start by laying down the roasted slice of eggplant (remove the sprig of rosemary, as the stock is rather tough). Spread a thin layer of bree on the eggplant. Place the turkey burger with arugula on the cheesy eggplant. Top with the grilled balsamic tomato and Bob's your uncle.
