These are awesome, pretty easy, and a great addition to any breakfast. You can cook a batch, and toss them in the fridge for the next few days!
What you'll need:
- 1 1/2 cup of shredded zucchini
- 1 1/2 cup of shredded sweet potato
- 1/2 cup of shredded parmesan cheese
- 1/2 cup of bread crumbs (or oat flour if you want to cut out some gluten)
- Salt and pepper
What to do:
Pre heat oven to 400. Mix all of the ingredients in a bowl. Spoon into lightly oiled muffin tin (mini muffin tin works best for bite sized crunchy delights). Toss in the oven for 20-30 minutes depending on the size of the muffin tin. I recommend checking on them every 10 minutes until the tops start to really crisp up!
Let them cool a little before you dig in!
