Cucumber Shrimp Greek Salad




Tasty, light, packed with fibre and protein... Doesn't get much better folks.

What you'll need (ingredients):
  • 20-30 small shrimp (cooked)
  • 1 cup of cooked quinoa
  • 1 medium sized english cucumber
  • 8-10 baby tomatoes
  • 1/4 cup of feta cheese
  • 1/4 cup of olives (optional! you either love em' or hate em')
  • 2 tbsp olive oil
  • 1/2 tbsp oregano (fresh if you can!)
  • 1 tsp basil (again, fresh if you can)
  • A little S&P
What to do:

Start by cutting the cucumber. You can leave the skin on, or take it off, it's up to you. You will want to cut out most of the seeds and fleshy bits so your salad isn't too watery. Next, chop up the tomatoes. Now combine everything in a bowl and refrigerate!

BOOM SHAKALAKA

If you have picky eaters who don't like olives you can just throw them on top when you serve.
