These are great. They keep in the fridge for a good 3-4 days (although they usually disappear before then).
What you'll need:
- 1 cup of rolled oats (you can grind them into flour if you like)
- 1 tbsp of pumpkin pie spice
- 1/2 tsp baking soda
- Dash of salt
- 10 packets of stevia (10g, or try 2 tbsp of honey if you're ok with a little sugar!)
- 1 cup of pumpkin
- 1/2 cup of vanilla greek yogurt (fat free if you like)
- 3 egg whites
- 2-3 scoops of vanilla protein powder of your choice (I used whey)
What to do:
First, preheat oven to 350.
Next, combine dry ingredients in one bowl, and the wet ingredients in another. Now add the wet mixture to the dry mixture! I sometimes add a handful of chopped almonds if I'm in the mood.
Now pour the batter into a muffin tin. I find it makes nine decent sized bites. Toss it in the oven for 25 minutes (until a toothpick comes out clean), and voila!
Done.
Easier than pie! (I don't make pies often).
These have roughly 90-100 calories each, and have a nice 10 gram protein punch to the muscles!
