Woah, this recipe is delicious, and relatively inexpensive!
What you'll need:
- 1/2 lbs of ground turkey
- 2 bell peppers (I love red, but green, orange, or yellow work great too!)
- 1 tbsp of olive oil
- 1/2 tbsp of thyme
- 1/2 tbsp of oregano
- 1/2 tbsp of cayenne pepper (If you like it HOT)
- salt and pepper
What to do:
Begin by cooking the ground turkey in a pan with the olive oil, thyme, oregano, cayenne, some pepper, and a little salt.
While that's cooking, halve the peppers and remove the stems as well as the core bits.
Place the peppers in an oiled cooking dish then fill with the cooked turkey. Top with some more pepper if you like, and a little hot sauce if you like as well (notice the two on the right in the bottom photo)!
Now, I tossed some broccoli and brussel sprouts with a little oil in there too, but this is optional. Feel free to toss whatever vegetables you think will be able to stand the 400 degree oven for 20 minutes!
... If you didn't catch that; toss it in the oven for 20 minutes at 400.
BOOM!
