Garlic Rosemary Pork Sandwich



Well folks, it's been a few days since my last recipe so lets get crackin!

What you'll need:
  • 1 portion of pork (I used a pork loin center cut, you could use any lean cut you like tho! I usually get what looks lean and is on sale!)
  • 1 diced clove of garlic
  • 1 tsp of dried rosemary (or fresh!)
  • 1 tbsp of olive oil
  • 1 slice of whole grain bread (whole wheat would be fine too, gluten free bread if you're into that!)
  • A few leaves of your favorit greens (Baby spinach and arugula are my favorits!)
  • 2 tbsp of shredded parmesan cheese
  • About a tbsp of dijon mustard

How to assemble:

Start by cooking the pork with the oil, rosemary, and garlic until desired level of doneness. You're generally going to want to cook it medium to well done.  So anywhere from 4-8 minutes a side at medium heat. 

Once the pork is done remove from head and toss the slice of bread in the same pan to absorb some of the garlicky and rosemary-y flavours!  

Now just spread some dijon on the toast, then top with your greens then pork and parmesan! Crack a little pepper on it and serve it with a nice salad!
