Greek Quinoa Kidney Bean Salad




This recipe is pretty great. Cheap, delicious and easy... what more could you ask for (besides world peace)?

What you'll need:
  • 1 can of kidney beans (rinsed)
  • 1 can of whole kernel corn (also rinsed)
  • 3 cups of cooked quinoa (cooled to at least room temp)
  • 1 cup of baby spinach
  • 1/2 cup of cubed (or crumbled) feta cheese
  • 1/4 cup of olive oil
  • 1/2 a lemon
  • 1 clove of garlic (minced)
  • 1 tbsp oregano
  • 1 tbsp basil
  • salt and pepper

How to assemble:

Lets start with the dressing. Combine the olive oil, juice of 1/2 a lemon, garlic, and the dried spices. whisk together and set aside.

Now, combine the rest of the ingredients (with the exception of the baby spinach). 

Add the dressing.

Boom.

I would recommend adding the baby spinach when serving. This yields a decent amount of food, so it might take a few days to get through. This could make the spinach get mushy and gross (so if you're into that... fill your boots!). Also, try adding some red onion and olives if you like!





Voila.
