White Bean Salad

This is a recipe I can't take credit for. My friend Adam made this for lunch during our last rehearsal for a show we're putting together.





What you will need:

  • 1-2 cups of white beans (Navy beans!) (fresh or canned)
  • A chopped tomato (or a few little ones)
  • 1 avocado (chopped)
  • 1/4 cup of diced carrots
  • 1/4 cup of black olives (pitted)
  • 1/4 cup of roasted almonds
  • Juice of 1 lime (or lemon)
  • 2 tbsp of olive oil
  • Salt and pepper
How to combine:

Throw everything in a large bowl. Mix everything together, add salt and pepper to taste. This is a really easy recipe, and a good introduction to free-styling your meals. 

Now just serve it to your friends and family, and let the compliments pour in.
