Spicy Chicken and Portobello Burgers

This is the first day of my BBQ week, so I hope you enjoy it! I sure did!

What you will need:
  • 1 lbs of ground chicken (or turkey)
  • 1/4 cup of egg whites
  • 1/4 cup of freshly chopped basil
  • 1/2 tsp of cumin
  • 1/2 tsp of cayenne pepper (more if you like it really spicy, less if you don't!)

  • Whole portobello mushrooms
  • Tomato
  • Red pepper
  • Baby spinach
  • Olive oil
  • Salt and pepper
What to do with all of this stuff:

I start by preparing the meat. Combine the chicken, egg whites, basil, cumin, cayenne pepper, and a little pepper in a large bowl. This pound of meat will yield you 4 quarter-pound patties (go figure).   After you clean up your meaty hands, start preparing the vegetables.

For each burger I use one whole portobello mushroom cap, a 1/4 of a red pepper, and a slice of tomato; this meal is really ideal if you're serving a group of four!  Lightly oil the portobello cap and red pepper, then add salt and pepper.

Let?s get down to the BBQ!


Heat the Q up to 400ish. Toss on the burger patties. After about 4 or 5 minutes toss the portobello cap and red pepper on as well. Flip occasionally for 10-15 minutes until meat is cooked.

Serve it up.



I plated mine in this order (from the bottom up): Mushroom cap, baby spinach, roasted red pepper, chicken patty, dijon mustard (if you wish), and then topped it with a fresh slice of tomato!
