What I used:
- Baby spinach
- Yellow pepper
- White mushrooms
- Avocado
- Sliced chicken breast (seasoned with salt and pepper)
- Strawberries
- Raw almonds
- Cranberry goats cheese
- Balsamic vinaigrette (1 tbsp balsamic vinegar, 1/2 tbsp dijon mustard, 1/2 tbsp honey, and some fresh cracked pepper)
Now, I should just tell you to throw all of these ingredients in a bowl (or on a plate) and go to town. But, Be wary of a few of the ingredients. The avocado, almonds and cheese are all very high in fat, so use them in moderation.
