Lemon Rosemary White Bean Salad

This is definitely a spring inspired dish. It's really simple, filling, and cheap!

What you'll need:
  • 1 cup of rinsed white beans (roughly half a can)
  • 1/2 a lemon
  • 1 sprig of fresh rosemary (or a tsp of dried stuff)
  • 1 garlic clove
  • 2 cups of kale (stems removed)
How to cook the stuff:

start by frying the rosemary and minced garlic on medium heat for 4-5 minutes. Now add the beans. Let them cook for roughly 4-5 minutes on each side. Now add the kale and 2 tbsp of water to the pan. Cover and let simmer for 5 minutes. 

Now plate, garnish with some lemon zest, and a little squeeze of lemon!


Eat up.
