Cottage Cheese Pancakes

I didn't think this post would actually come to fruition. I tried to create pancakes out of cottage cheese several times before I finally got the proportions right. I had seen many recipes for this style of pancake, but none were much healthier than normal pancakes. So, I finally came up with the simplest recipe (that i'm in shock I hadn't realized earlier).

This recipe is about as simple as it gets. You have three ingredients, and they're all equal parts. You can add a few minor thing in the mix if you like as well.

The pancakes are made of equal parts:

  • Cottage cheese
  • Egg whites
  • Quick oats


Now you can add a few other things if you like such as:
  • A dash of cinnamon
  • Some fresh or frozen berries (don't add into mixture, add once poured on pan)
  • Vanilla to taste if you so desire

What to do, what to do, what to do:

Start by mixing the main three ingredients together in a large bowl. I made mine with a 1/2 cup of each ingredient (this worked out to be roughly 325 calories). Now is also when you would add the cinnamon or vanilla if you wanted. 

Now, on a lightly oiled pan that has been heated to medium heat, throw on a 1/3 of a cup size portion of the batter. You will cook these for two or three minutes on each side.

PLATE EM AND EAT EM!



"But wait! What about toppings? What do you have on the go there in that picture huh?" you screamed.

Well I used a blueberry 'sauce' that I made by heating up about a half cup of frozen blueberries and mashing them up with a fork. Fancy I know! It is delicious. But, depending on what your caloric needs are you could toss some low sugar maple syrop on, or even melt some peanut butter over these puppies!
