Scrambled omelet with FETA

I LOVE CHEESE. Especially feta cheese. Salty and delicious, doesn't take much to really add some taste to a dish. 

This is a meal I eat on a regular basis. I make sure I have time to prepare this meal almost every morning, I just don't feel right without it. 

As far as ingredients go it's pretty simple, I mean it's an omelet, so you can add whatever you want to it. These are the ingredients I choose:

  • 250ml of carton egg whites (this meets my protein requirements for my meal, you could use more or less depending on your goals and weight)
  • Red, yellow or orange pepper (all if you really want to)
  • Jalapeño
  • Grape tomatoes
  • spinach or kale
  • Red onion (if I have some kicking around)
  • Feta Cheese (goats or cows, depends what i'm feeling like, usually goat tho.)
I start by spraying a pan with a little PAM and get the onions caramelized a bit, once they start to brown I add the rest of the vegetables except the spinach or kale. Once they soften up a bit I add the spinach, then the egg whites. Scramble as you would normal scrambled eggs. Toss on a plate once cooked and crumble the cheese on top. then ENJOY. 

I guarantee you this is a delicious, and pretty easy way to start the morning.
