Looking for a better, cleaner option in the grab-and-go breakfast department? Want it to be so easy it should be illegal? This simple recipe will be a great introduction into the wild world of sweet potato muffins!
What you'll need:
- 2-3 cups of mashed sweet potato (two small-medium sized yams)
- 1 1/2 cups of flour (whole wheat flour, white flour.. whatever you have)
- 1 tbsp of oil (Light tasting olive oil is probably best)
- 2 tbsp honey
- 1 whole egg
- Few cracks of salt and pepper
Optional stuff:
- Chives (shown)
- Cheese (shown) sprinkled on top
- Bacon (I wish it was shown) some days you need a lil taste. and if you add two cooked strips chopped finely, you'll only be adding a dozen or so calories per muffin
- Get creative!
What to do:
Preheat oven to 400
Mix the mashed sweet potato, oil, honey and egg in a big bowl. once it's mixed, stir in the flower until you have a muffin batter consistency. You might need a little more or less than 1 1/2 cups, it's not rocket surgery. If exact measurements are your thing, this could be a great recipe to let loose and eyeball stuff. now mix in the optional ingredients.
Fill a greased muffin tin (I usually get 8 or 9 muffins) and throw it in the oven for 15-20 minutes.
Toss them in the fridge. Eat them hot or cold, delicious either way. I usually eat them straight out of the fridge!
