Tuna Cucumber Roll



Want a great light snack? Then this recipe is for you.

What you'll need:
  • 1 cucumber
  • 1/2 can of tuna
  • 1/4 of an avocado
  • 1 tbsp mustard (yellow or dijon, whatever your little heart desires)
  • a few small pieces of julienned red pepper (optional) 
  • salt and pepper

How to assemble:

I usually start by preparing the filling. Combine the tuna, avocado and mustard in a bowl. I like mine cold so I usually do this 20 or 30 minutes before and toss it in the fridge. 

Now you need to peel your cucumber (If you want. Some people enjoy the skin. I usually take half of it off). Next, slice it into 1/2 inch thick slices. Now take a knife and carefully cut the center out. If you're not confident with a sharp knife, you can push out the soft center with your fingers. 

Now just stuff the cucumber with the tuna mixture and a little julienned red pepper. Finally, sprinkle a little salt and pepper!
