What you'll need:
- 1 cucumber
- 1/2 can of tuna
- 1/4 of an avocado
- 1 tbsp mustard (yellow or dijon, whatever your little heart desires)
- a few small pieces of julienned red pepper (optional)
- salt and pepper
How to assemble:
I usually start by preparing the filling. Combine the tuna, avocado and mustard in a bowl. I like mine cold so I usually do this 20 or 30 minutes before and toss it in the fridge.
Now you need to peel your cucumber (If you want. Some people enjoy the skin. I usually take half of it off). Next, slice it into 1/2 inch thick slices. Now take a knife and carefully cut the center out. If you're not confident with a sharp knife, you can push out the soft center with your fingers.
Now just stuff the cucumber with the tuna mixture and a little julienned red pepper. Finally, sprinkle a little salt and pepper!
